Chocolate Coconut Cream Vegan Icing


I've been having a bit of a fiddle with some variations you can pop on your chocolate cakes this festive season, rather than just a sickly sweet icing made with sugar (that's what my kids normally like haha).

It gets hard when you don't have things like cream or cream cheese so I've been having a fiddle with the Nature's Charm Coconut Whipping Cream and I have two options that worked well for me and both of my kids liked, it just depends what type of result you want.

If you want a really firm mousse filling you could make a batch of my vegan chocolate mousse recipe and let it set in the fridge. It will easily spread on your cakes and you can even pop it in a piping bag and pipe on your cakes. You can find that recipe here :-)

The other option I worked with shown above is a softer more cream like result. I simply whipped a very cold can of Nature's Charm Coconut Whipping Cream and then I mixed in 100g of room temperature Nature's Charm Coconut Chocolate Fudge Spread. I let it sit the fridge for a while to firm up but it didn't set anywhere near as firm as the mousse so it was lovely and soft like regular whipped cream. I grated some Sweet William Sugar Free Dark Chocolate on top. If you make this chocolate cream, I would pop the cream on just before serving and don't leave it out of the fridge if there is some left or the cream will melt.
