Mint, Chocolate And Coconut Nut Free Bliss Balls


Bliss Balls are always in a winner on the blog and I love them because they're so quick and easy to make and a great snack to have in the fridge when the kids are hungry. 


This recipe is great for kids, but I made this chocolate and mint bliss ball recipe up more for the adults. I'm thinking they would make a yummy home made Christmas present in a few weeks!!

Mint, Chocolate And Coconut Nut Free Bliss Balls Recipe

Gluten free, wheat free, dairy free, egg free, nut free, soy free

Ingredients

1 tbsp chia seeds, you can use black or white
¾ cup (95g) organic cacao nibs
1½ cups (130g) organic desiccated coconut
2 tbsps organic cacao powder
Pinch of salt
2 tbsps organic coconut cream (use the thick cream at the top of the can)
12 large fresh medjool dates
4 drops edible peppermint oil / peppermint extract (or to taste)

Method

  • Grind chia seeds and cacao nibs in a food processor in Thermomix until fine - approx. 30 secs, speed 9 in a Thermomix
  • Add all other ingredients and blitz for about 1 minute until it's nice and smooth and comes together
  • Roll into balls, or you could pop in a slice pan and chop up later
  • Place in the fridge until ready to serve

Tip: You could also use organic shredded coconut or coconut chips if that's what you have at home, just blitz it for longer until it's nice and smooth. Feel free to roll these in desiccated coconut or Drinking Chocolate.
