Being close to the end of the year, I sometimes lose my mojo with exciting lunch boxes for the kids so I thought I'd create a new gluten free lunchbox slice recipe. My kids are totally into chocolate so it made the decision easy!
I've just used a pre-blended gluten free flour to keep it really easy for everyone and I've popped a little tip down the bottom if you use a different flour to me (who has time for fancy stuff this time of the year?!) You don't need to ice this if you're really strapped for time - it will still taste good plain.
Gluten free, wheat free, dairy free, nut free, soy free and egg free
Ingredients
1 cup (130g) Bob's Red Mill All Purpose Gluten Free Flour
1 cup (85g) desiccated coconut
½ cup (75g) coconut sugar (or rapadura sugar / raw sugar)
⅓ cup (40g) raw cacao powder (or cocoa)
1 tspxanthan gum (or guar gum)
¾ cup (165g) coconut oil, melted
1 tsp vanilla extract
1 tub (113g) apple puree
Method
To Ice: I sifted 1/2 a cup (75g) of pure icing sugar with 1 tbsp cacao and slowly added enough water until it was thin enough to spread. I decorated with Hopper Sprinkles in white because my kids say they don't like coconut - desiccated coconut on top would be yummy!
Tip: If you use a different gluten free flour and it already has xanthan gum you won't need any xanthan gum in the recipe.
