Gluten Free Scones


It's Mother's Day this Sunday so those of us who are mums get to have a day off (probably not in the real world but the we can dream!)


I thought I'd make up a recipe for some simple gluten and dairy free scones that you can whip up in a few minutes. 
They're best eaten warm from the oven or if they are cold just heat them up again and serve warm. We just love jam and butter (or dairy free spread) in our house. If you can have cream, that'd be really yummy as well! Alex actually ate honey and dairy free spread on his so really you can go for it with whatever topping you like!

Gluten Free Scones Recipe

Gluten free, wheat free, dairy free, soy free, nut free, egg free

Makes approximately 16 small scones

Ingredients:

2½ cups (325g) Bob's Red Mill Gluten Free All Purpose Flour
2 tbsps rapadura or coconut sugar (or sugar)
1 tsp xanthan gum (or guar gum) - you won't need this if you use a brand of flour that has xanthan gum in it

2 tsps gluten free baking powder
1 tbsp solid coconut oil
1 cup of milk (whatever you like - I used oat milk but this is not gluten free)
extra milk for brushing scones with

Method:

  • Heat oven to 200°C
  • Line a baking tray with baking paper
  • Put all dry ingredients into a food processor or Thermomix and combine (5 secs, speed 5 in Thermomix)
  • Add solid coconut oil and blitz until it resembles fine bread crumbs (5 secs, speed 5 in Thermomix) 
  • Add the milk to the mixture and gently mix with a spoon or spatula - you may like to tip the dry mixture into a bowl before you do this (I did it in the Thermomix bowl with a spatula so I didn't have to wash extra dishes ;) )
  • Tip out soft, sticky dough onto a lightly floured mat on the bench (use more of the Bob's Red Mill Gluten Free All Purpose Flour)
  • Knead gently until smooth and spread out to about 2cm thick with your hands
  • Use a small round cutter (about 5cm) to cut out the scones and place on prepared baking tray
  • Brush top of scones with milk
  • Put in hot oven to bake for approximately 10 - 12 minutes
  • Remove from oven and cool on a wire rack

Note: I haven't tried this with recipe with any other brands of gluten free flour. I particularly like the Bob's Red Mill brand. If you haven't tried it, I urge you to give it a go!
