Yum! Brownies. My favourite gluten free brownie recipe is definitely Dark Chocolate Brownies by The Gluten Free Goddess. They're rice free so perfect for Alex and so yummy! You can't even tell they're gluten free.
This recipe does have eggs and almond meal so I've recreated this recipe free of eggs and nuts - and reduced the sugar.
Gluten free, wheat free, dairy free, soy free, nut free, egg free.
Ingredients:
½ cup (45g) desiccated coconut
⅓ cup (50g) sorghum flour (or rice flour)
¾ cup (115g) rapadura or sugar
½ tsp fine salt
¼ tsp bi-carb soda
150g dark chocolate (dairy and soy free) - I used Enjoy Life Mega Chunks
½ cup (110g) coconut oil
2 tbsp chia seeds plus 6 tbsps water (or 2 eggs) - I used black chia seeds
2 tsp vanilla extract
Method:
I've made my brownies and then used an Easter egg cookie cutter to cut them out. I've used some Hopper Natural Food Colours and 100s & 1000s to decorate in various ways. Easter is all about bright, pretty colours so go for it!! You can find all of the Hopper Natural Food colours, sprinkles, 100s & 1000s and pearls here.
