Easy Gluten Free Brownies


Yum! Brownies. My favourite gluten free brownie recipe is definitely Dark Chocolate Brownies by The Gluten Free Goddess. They're rice free so perfect for Alex and so yummy! You can't even tell they're gluten free.


This recipe does have eggs and almond meal so I've recreated this recipe free of eggs and nuts - and reduced the sugar.

Gluten Free Brownies - Happy Tummies

 

Gluten Free Chocolate Brownies Recipe

Gluten free, wheat free, dairy free, soy free, nut free, egg free.

Ingredients:

½ cup (45g) desiccated coconut
⅓ cup (50g) sorghum flour (or rice flour)
¾ cup (115g) rapadura or sugar
½ tsp fine salt
¼ tsp bi-carb soda
150g dark chocolate (dairy and soy free) - I used Enjoy Life Mega Chunks
½ cup (110g) coconut oil
2 tbsp chia seeds plus 6 tbsps water (or 2 eggs) - I used black chia seeds
2 tsp vanilla extract

Method:

  • Heat oven to 170°C
  • Prepare baking pan - I use a square pan with a loose base 19cm x 19cm 
  • Prepare chia egg if using so it can sit and gel while you prepare the rest of the mix
  • Put all dry ingredients except chocolate (and chia seeds if using chia egg) into a food processor or Thermomix and blitz until well combined (10 secs, speed 9 in Thermomix)
  • Thermomix: Remove and set aside. Put chocolate into unwashed bowl and blitz 5 secs, speed 9. Add coconut oil and melt 2 mins, 50°C, speed 1. Add all other ingredients and mix 30 secs, speed 4 until thick and glossy
  • Regular: Add melted chocolate, melted coconut oil, chia eggs (or eggs) and vanilla to food processor and mix until thick and glossy
  • Pour into prepared pan, place in hot oven and cook for 30 minutes or until cooked through
  • Remove from oven and leave in the pan to cool for 5 minutes
  • Remove from pan and place on a wire rack to cool completely


I've made my brownies and then used an Easter egg cookie cutter to cut them out. I've used some Hopper Natural Food Colours and 100s & 1000s to decorate in various ways.
