Dairy Free Chocolate Caramel Easter Eggs


Easter is getting close, really close and I wanted to show you how easy it is to make something yummy for your kids even if they have food allergies! This week I've made some caramel filled Easter eggs. These Easter eggs are really, really easy to make and all you need is some safe dairy free chocolate and a can of Nature's Charm Sweetened Condensed Coconut Milk - available at Happy Tummies.
 

First you need to make the caramel filling from your Sweetened Condensed Coconut Milk. There are lots of ways to do this and I found this great article that lists what to do - check it out here.


I made mine in a double boiler. I cooked the sweetened condensed milk for about 2 hours until it had changed colour. It was still quite runny but thickened up and went really sticky as it cooled. 2 hours sounds like a long time but I just popped it on the stove top while I did other things and periodically stirred it and topped up the water in the bottom.


Once the caramel is cooled, it's time to make the chocolates. Melt your safe chocolate - again I use a double boiler, and fill your egg moulds so that the chocolate goes up the sides. Make sure the eggs aren't too full.

Place the chocolate shells in the fridge to set then take them out and add the caramel. I popped it into a pipping bag which made it easy. Fill the moulds to the top with some more melted chocolate. Place the chocolates in the fridge again to set.
