Choc Mint Vegan Ice Cream


My kids don't eat much ice cream really. I buy a small tub of dairy free occasionally and sometimes make a chocolate one but I thought I'd have a go with Nature's Charm Coconut Whipping Cream and see how it turned out.


Alex loves mint and so I thought I'd give that a go. It turned out really lovely and he was pretty impressed. You can easily adjust the amount of sweetener or mint to suit your family, or even add more choc chips ;-)
 

Choc Mint Vegan Ice Cream - Happy Tummies 

Choc Mint Vegan Ice Cream Recipe

Gluten free, wheat free, dairy free, soy free, egg free, nut free (ensure chocolate is soy free if required)

Ingredients:

2 cans Nature's Charm Coconut Whipping Cream, refrigerate for at least a day before using
½ cup (170g) maple syrup
½ tsp Chef's Choice Peppermint Extract
Hopper Natural Green Food Colour - just pour some in until you are happy with the colour
200g vegan chocolate chips - I used Enjoy Life Mini Chips

Method

  • Pour both cans of coconut whipping cream cream into a clean food processor and whip until thick
  • Add in peppermint extract to taste (you may need to adjust this if you like less or more mint flavour, or you use a different brand to me)
  • Add in maple syrup to taste - feel free to adjust the quantity to suit your family
  • Add Hopper Natural Colour in green until you feel like the colour is right
  • Carefully pour the mixture into an ice cream maker and churn until ready
  • Add choc chips before you turn off the ice cream maker so they are mixed through
  • You can serve immediately as show in the picture or pop in the freezer to firm up a bit
  • Note: This ice cream will freeze hard so if not eaten immediately or that day, you'll need to take it out to soften before serving - unless you pour into icy pole moulds like this. You could always just make a half serve and eat it all that day :-)


I served in some Eskal Ice Cream Cones I'd drizzled on a little melted chocolate and sprinkled on some Hopper 100s & 1000s. I did this before I made the ice cream so they had time to set. Make sure you set them in the fridge upside down on some baking paper
