Hello out there all you fellow families living with allergies!


This journey certainly isn’t for the faint hearted is it?


I’m sure a lot of you can relate to the many failed recipe inventions I have experienced when faced with a child who can eat so few foods. Unfortunately there are too many to count…. Thank goodness that with failures also come some delicious successes and I think these are one of them.


I could tell you that these apricot and ginger cookies are the product of many years of baking experience, however reality is I somehow winged it with a bit of this and a bit of that, the planets must have aligned and they somehow turned out delicious, woot! I may even go so far as to call it a bit of kitchen Alchemy…. These little morsels are wheat free, egg free, dairy free, vegan and pretty darn tasty.

Wheat Free Apricot Biscuits - Happy Tummies


Wheat Free Apricot Lunchbox Biscuits

Wheat free, dairy free, egg free, soy free, nut free

Makes approx. 25 bite size cookies

Ingredients:

2 fresh apricots
1 large carrot
1 tsp ginger powder (less if you do not like a strong ginger flavour)
1 tsp vanilla powder
½ cup (185g) honey
½ cup (110g) coconut oil
1 cup (100g) rolled oats
½ cup (45g) organic desiccated coconut 
½ cup (70g) sunflower seeds - activated if possible
⅓ cup (50g) coconut flour
Pinch of salt

Method:

  • Preheat oven to 180 °C (fan forced)
  • Place sunflower seeds in food processor and pulse until they are a similar consistency to the coconut flour
  • Add all remaining ingredients to the food processor and blend until the mix is firm enough to shape but still very moist
  • Use clean wet hands to roll into balls and flatten into a biscuit shape
  • Place on a lined baking tray and bake in oven for 20 mins - they should be a lovely golden colour
  • Allow to cool on the baking tray for 10 minutes then transfer to a wire rack
