Gluten Free Anzac Biscuit Slice - Happy Tummies


I love a good Anzac biscuit and they're pretty easy to make for people with allergies. I thought I'd create a slice this year because sometimes I just don't have the time or patience to be rolling biscuits into balls. A slice is easy, just whack it in the pan and cut it up when cooled. I added in some pureed apple in this recipe to add moisture and make it nice and soft.

Gluten Free Anzac Biscuit Slice

Wheat free, dairy free, soy free, nut free, egg free, can be gluten free

Ingredients:

1¼ cups (160g) Bob's Red Mill Gluten Free All Purpose Flour (or any gluten free plain flour)
1 cup (85g) desiccated coconut
½ cup (75g)rapadura (or coconut sugar / sugar)
1 cup (100g) rolled oats (or quinoa flakes for gluten free)
1 tsp xanthan gum (or guar gum) - you won't need this if you use a brand of flour that has xanthan gum in it

½ cup (110g)coconut oil
2 tbsps honey
½ tsp bi-carb soda
2 tbsps boiling water
1 small tub apple puree (approx 120g)

Method:

  • Heat oven to 160°C
  • Line a slice baking pan with baking paper (approx. 20cm x 30cm)
  • Put all dry ingredients into a food processor or Thermomix and combine (3 secs, speed 4 in Thermomix, on reverse if you don't want rolled oats broken up)
  • Heat coconut oil and honey together until warm and oil is melted
  • Mix together bi-carb soda and boiling water and then add to coconut oil / honey mixture (it should fizz)
  • Add the warm coconut oil mixture and apple puree to the dry ingredients and mix until well combined (5 secs, speed 4 in Thermomix, on reverse if desired)
  • Pour into prepared pan and smooth out level, place in pre-warmed oven and cook for 25 minutes or until cooked through
  • Remove from oven and allow to cool in the tin
