This week I wanted to introduce you to Jen Shaw from Barefoot Kitchens! Jen is a hardworking mum of 7 (yep 7!!!). Her focus in the kitchen is on real food that's simple to make. Jen's passionate about helping families achieve better health through providing delicious and practical real food recipes and sharing her journey through life on her blog. Jen believes food is to be enjoyed free from additives and weird processes and created with love as often as possible in our home kitchens.
Jen and her gorgeous kids (one is in the oven still ;) )
This week we've been lucky enough that Jen's given me permission to share one of the recipes out of her new cookbook Lovely Little Lunch-Boxes! Yum!
Gluten free, wheat free, dairy free, soy free, nut free, egg free
Ingredients:
1kg chicken drumsticks
1/4 cup chicken broth (optional)
2 tbsps honey
1 tbsp coconut amino sauce
1 tbsp sesame seeds
Method:
Hint: Wheat free tamari makes an excellent substitute for coconut amino sauce
If you're loving the simplicity of this great recipe and want more you can get a copy of Jen's book Lovely Little Lunch-Boxes here. It includes 30 recipes that are gluten free, mostly dairy free and refined sugar free. I got a copy the moment they went on sale and I love it!!
