Dairy Free Cheesey Sauce


Cheese pasta is our house is always a quick easy dinner for the kids when Chris and I feel like something different to the kids, or I'm going out somewhere in the evening and need something quick. My kids love it and they always scoff the lot! I used to make the sauce and then mix in some white soup I make but lately I just make it all at the one time because it's so much easier.


If you've got a Thermomix it's really easy and will only take a few minutes. If you don't, I'd puree the veggies first and then follow your usual method for making a white sauce using the ingredients below and then you could just mix in the pureed vegetables at the end. You can use this sauce as a base and sauté some other yummy ingredients as well to jazz it up a bit and stir through at the end - use your imagination here, there are so many options.


Here are some simple ideas:

  • chopped ham (my kids favourite and super easy)
  • bacon and leek - add some mushroom as well if you like
  • chicken and mushroom
  • left over roast meat and roast vegetables
  • sautéed vegetables and garlic

Dairy Free Cheese Sauce Recipe

Gluten free, dairy free, egg free, nut free, soy free

Ingredients:

100g cauliflower
100g peeled zucchini
50g carrot
30g coconut oil
50g arrowroot starch
1½ tbsps nutritional yeast
½ tsp salt
500g dairy free milk

Thermomix Method:

  • Chop cauliflower, peeled zucchini and carrot on speed 5 for 10 secs
  • Scrape down the vegetables
  • Add the coconut oil
  • Cook on speed 1 at 100 °C for 5 minutes
  • Add all other ingredients and cook on speed 4 at 90 °C for 7 minutes
  • Puree on speed 10 for 20 secs - this makes the vegetables totally undetectable
  • Pour sauce over cooked pasta and add other sautéed ingredients of choice if desired


Now the best thing about this sauce is you can freeze left overs for another night. I freeze in ice cube trays so I can just take out what I need. I let it defrost in the fridge overnight and then just stir it through the hot pasta. 


You could also use this cheese sauce for other dishes like lasagna, drizzle a bit on pizzas, on jacket potatoes..... anywhere that you would use a cheese sauce.
