Christmas is such a wonderful time of year…well it can be if you’re super organised and not prone to stress pimple break outs!
I do love Christmas. I’m a sucker for any musical Christmas ornament (especially the penguins that dance to ‘Ice Ice Baby’) and I spend a long time making sure my Christmas tree is adorned with every ornament I own (which is lots!).
On top of my tree sits a very special lady; it’s an Angel which used to sit on top of my Grandparents Christmas tree. My Grandparents are no longer with us, but seeing her Angel there on my tree brings back memories of finding pennies in Grandmas pudding and eating turkey at the kiddies table. Christmas as a child is such a magical time, but sometimes as an adult we get so caught up in the busyness of the season that we miss out on the fun.
So this Christmas I challenge you to have some fun; to experience Christmas with all the wonder and amazement that a child does. Visit the local Christmas lights, blast Christmas carols so loud that your neighbours think the Claus’s have moved in next door, watch Home Alone and The Muppets Christmas Carol, and eat only Gingerbread food for a day. The last one I can definitely help you with!

Today I am sharing with you my Shortbread recipe. Shortbread is a traditional Scottish Christmas biscuit that is normally made with lots of butter and wheat flour. My Shortbread is made using coconut oil and coconut flour instead making it a dairy free and gluten free Christmas treat. It is also vegan friendly and egg free making it a super inclusive recipe. These recipes are my absolute favourite as no one feels left out; and we all know how that feels…miserable!!
Gluten free, wheat free, dairy free, soy free, nut free, vegan, refined sugar free
SERVES: 8
PREPARATION TIME: 10 minutes plus 30 minutes resting time
COOKING TIME: 36 minutes
Ingredients:
¾ cup arrowroot
⅓ cup plus 1 tbsp coconut flour
⅔ cup coconut oil
¼ cup maple syrup / rice malt syrup
2 to 3 tsps vanilla extract
½ tsp baking powder
