Carrot Dip


It's my last blog for the year and I wanted to finish off on something nice and simple you can whip up in a few minutes to take to parties.


Purchased dips are a bit tricky for families with food allergies and intolerances due to gluten, dairy and especially nuts. This carrot dip is nice and sweet so your kids will like it and you can serve it with chopped veg or gluten free crackers :-)

I used a can of organic cannellini beans but I think any white beans would do. Make sure you rinse them really well in filtered water so all of the gluggy stuff comes off.

Carrot Dip - Happy Tummies

 

Gluten & Dairy Free Carrot Dip Recipe

Gluten free, wheat free, dairy free, soy free, nut free, egg free

Ingredients:

500g approx chopped and peeled carrots (I started with 570g carrots)
2 tsps olive oil for roasting carrots
1 can organic white beans (I used cannellini)
2 tbsps honey
2 tbsps olive oil
pinch of cinnamon
¼ tsp salt (I used Herbamare but any will be fine)
freshly ground pepper to taste

Method:

  • Peel and roast the carrot for about 30 minutes in 2 tsps olive oil - I did mine in an airfryer but in the oven will be fine
  • Let the carrot cool
  • Add carrot, beans and other ingredients into a food processor or Thermomix and blitz until really smooth. Adjust salt and pepper as required to taste
  • Serve with chopped vegetables and gluten free crackers
