Easy Gluten Free Pancakes With Choc Chips


Next Tuesday is Pancake Tuesday so I just wanted to give you a reminder to get yourself prepared! I'll probably whip some gluten free pancakes up for breakfast so I don't forget ;-)


Since my kids are into anything chocolate and I never have enough time, I'm going to show you how you can easily add a bit more goodness to a simple pancake mix. If was making them for breakfast though, I would just leave out the choc chips and serve them plain with some fruit and safe yoghurt. I have added a little bit of sneaky zucchini to get some veg in - always a good idea at my house!

Easy Gluten Free Pancakes With Choc Chips - Happy Tummies 

Gluten Free Pancakes

Gluten free, wheat free, dairy free, soy free, nut free, egg free, yeast free

Ingredients:

1 pack Bodhis Pancake Mix
½ cup (110g) Enjoy Life Mini Chips (optional)
100g finely grated peeled zucchini - make sure they don't know it's there ;-)
1 cup milk of choice - or use water as instructed on pack
Oil to cook in

Method:

  • Tip pancake mix into a bowl 
  • Add all other ingredients and mix until well combined - make sure it's well combined for every pancake (the choc chips tend to settle on the bottom of the bowl)
  • Cook in greased pan on low heat until bubbly on one side and gently turn over (I use coconut oil) - or cook in a pancake maker (I just bought a Kambrook Pancake Perfection a couple of months ago - genius!)
  • Leave a couple of minutes until cooked through
  • Serve as desired and enjoy while still warm


    Tip: This pancake mix is awesome for camping or when you're really in a hurry. Just fling in some water, shake and pour it out. I like to make it in a bowl so I use every last drop :-)
