Simple Gluten Free Vanilla Biscuits


It's Mother's Day soon and in my family we like to keep Mother's Day simple. There's no need to spend a lot to show your mum you love her!


Nothing beats some craft done by the kids at school, breakfast in bed made with love by my kids (even if it is something a bit weird) and a small gift that shows me they appreciate all of the things I do for them.


Usually Chris takes the kids to the shops without me and lets them choose what they will give me - yep, sometimes I get a strange present but the kids are always so proud of what they chose and I love that they took the time to think about what I might like.


So.....if you see me on Mother's Day and I'm wearing something that's not my usual style you will know why ;-) 


Gluten Free Vanilla Biscuits - Happy Tummies
 

Gluten Free Vanilla Biscuits Recipe

Gluten free, wheat free, dairy free, egg free, soy free and peanut free

Ingredients:

120g blanched almond meal
70g sorghum flour
60g arrowroot starch
75g rapadura (or sugar)
1/2 tsp baking powder
1/2 tsp vanilla extract
60g coconut oil - adjust as necessary 

Method:

  • Pre-heat oven to 160°C
  • Mix together almond meal, sorghum, arrowroot, rapadura and baking powder in food processor
  • Add vanilla extract and coconut oil and mix until a dough is formed - adjust amount of coconut oil as necessary (I'd start with 40g and add more if needed)
  • Roll into balls, place on oven tray and flatten 
  • Place into pre-warmed oven for approx. 10 minutes - keep a close eye on them
  • Leave to cool on tray
