Easy Gluten Free Chocolate Chip Cookies

My kids love choc chip cookies, any cookies really, but chocolate is always a winner. This recipe has only four ingredients so you can't get much easier than that. You can halve the amount if you like, but I wanted to use the whole can of sweetened condensed coconut milk to avoid waste!

Feel free to try it with a different flour if you like. I particularly like the Bob's Red Mill All Purpose Flour because it's rice free which is great for my son who can't eat rice. It also doesn't have that chalky kind of feel in your mouth that some gluten free flours have - you know what I mean ;)

Chocolate Chip Cookie Recipe

Gluten free, wheat free, dairy free, soy free, nut free, egg free


3 cups (390g) Bob's Red Mill All Purpose Flour
1 cup (190g) Enjoy Life Mini Choc Chips
1 can Nature's Charm Sweetened Condensed Coconut Milk
2 tsps gluten free baking powder


  • Heat oven to 180°C
  • Line two baking trays with baking paper
  • Put flour, sweetened condensed coconut milk and gluten free baking powder into an electric mixer or Thermomix and mix well - it will be very thick
  • Toss in choc chips and mix in quickly without chopping them up (make sure you have Thermomix on reverse at this stage)
  • Roll into balls in tablespoon amounts with damp hands and press down with a fork - I wet the fork too in between each cookie
  • Pop trays of cookies in the hot oven for 12 minutes or until lightly browned
  • Remove from oven and let cool on trays
