Ice cream…..it’s probably one of my favourite foods. Everyone should have the pleasure of a cool, refreshing treat in summer (or even winter if you’re like me), even those who can’t tolerate foods like gluten, dairy, soy, eggs or nuts.
I thought I would work on a super simple recipe for ice cream that you can mix up in a food processor or Thermomix and pop into moulds.
Below is a super simple recipe done 3 ways that you can modify to the fruit flavour you like and it’s gluten, dairy, soy, egg and nut free so everyone can enjoy it :)
Make sure you use a quality full fat coconut cream (or coconut milk) and that it is in a BPA free can. I also choose to use a quality alcohol free vanilla extract, organic honey and organic raw cacao.
A great addition to your frosty treats, especially for fussy eaters where every mouthful counts, is Nutra Organics Superfoods for Kidz C Berry Blast (great for fruity flavours) and Nutra Organics Superfoods for Kidz Berry Choc Chunk which is perfect for chocolate.
I simply poured the mix into moulds and froze – I recommend Zipzicles. If you want to have it like soft serve and you have a Thermomix simply freeze coconut cream in ice cubes and freeze fruit. Blitz all ingredients on 9 for as long as it takes to become smooth, scraping down every now and then. When I tried it out I found I needed to add a bit of water to get it really smooth. You could also add more liquid coconut cream but I didn’t want to open another can just for that!
