Gluten Free Date Cake


Woo hoo! My kids start school again tomorrow and I really can't hide my excitement. I really have loved having them home, but now they're bored, can't wait to see their friends again and I need some space!


I've been doing a bit of experimenting with cakes that freeze well to be cut up and go into lunchboxes and this new recipe is a winner. Not only is it free of gluten and dairy, it doesn't need eggs at all!! :-)
 

Gluten Free Date Cake - Happy Tummies


Gluten Free Date Cake Recipe

Gluten free, wheat free, dairy free, soy free, nut free, egg free

Ingredients:

½ cup (45g)desiccated coconut
½ cup (70g)sorghum flour (or rice flour)
½ cup (90g)potato starch
½ cup (75g) Melrose Golden Fax Meal
½ cup (75g)rapadura (or coconut sugar / sugar)
4 tsps gluten free baking powder
2 tbsps coconut oil, melted
160g dried dates
1 cup (250mls) boiling water

Method:

  • Pre-heat oven to 180° C
  • Line a loaf pan with baking paper
  • Pop dates into a glass bowl, add boiling water and let it stand for approx. 15 minutes
  • Add other ingredients to large glass bowl with the dates and water and mix with a wooden spoon until well combined OR pop all ingredients into Thermomix and mix on speed 4 for 10 secs
  • Spoon mixture into loaf pan and pop in the hot oven
  • Bake for approximately 30 minutes until cooked
  • Leave to cool in the pan for 5 minutes and move to a wire rack to finish cooling off
  • Serve plain or with butter if tolerated. May also be toasted :-)
