Tomorrow is Pancake Tuesday and as my son is such a chocolate lover, I created a new gluten free pancake recipe that he could have. Even though he can have a little cooked egg now, I made this recipe egg free so it suits kiddos that can't have egg, and the bonus for me is the hidden fruit that Alex won't normally eat!
Gluten free. wheat free, dairy free, soy free, nut free, egg free
Makes approximately 10 large pancakes
Ingredients:
¾ cup (65g) desiccated coconut
¾ cup (105g)sorghum flour (just use rice flour if you don't have sorghum)
½ cup (60g)arrowroot starch
¼ cup (40g) rapadura or sugar
¼ cup (30g) cacao powder (or cocoa)
2 tbsps Superfood for Kidz Berry Choc Chunk Powder (optional)
2 tsp gluten free baking powder
¼ tsp bi-carb soda
pinch salt
½ cup (110g) Enjoy Life Mini Chips (optional)
1 tub (approx. 110g) apple puree (I use Macro Organic)
1 cup milk of choice

PS. I've got this nifty Kambrook pancake maker my mum gave me years ago that cooks the pancakes both sides at the same time and there's no need to flip them over (plus they always turn out as perfect circles). It's one of my most loved and used kitchen appliances. You can't buy them now but if you know someone who has one lurking in their cupboard and it's not being used, try and get your hands on it!!
