It's Mother's Day soon so whip up this easy gluten and dairy free chia pudding for a Mother's Day breakfast treat! If your kids are old enough, you could even suggest they make it for you :-)


Gluten and Dairy Free Chia Pudding - Allergysave - Happy Tummies


Berrynice Chia Pudding Recipe

Gluten free, wheat free, dairy free, egg free, soy free, tree nut free, peanut free, refined sugar free

Ingredients:

400 grams organic frozen berries
1 x 400ml can coconut milk
¼ cup raw honey, to taste (or maple syrup, brown rice syrup)
½ cup chia seeds
½ tsp vanilla powder
Squeeze lime juice

Method:

  • Allow berries to defrost for 10 minutes
  • Place all ingredients into a blender and blend until well mixed (if you want a smoother pudding, without the chia seed texture, continue to blend until smooth)
  • Refrigerate for at least 4 hours - the longer you leave in the fridge the thicker the pudding will become
  • Decorate with berries, toasted coconut flakes and chocolate swirls for a delicious treat for mum
