Yummy Gluten Free Apple Crumble

 

Apple crumble was always a staple at our house growing up. My mum made dessert quite a bit, but it was always homemade and usually fruit based. I don't tend to make dessert often but I find apple crumble is usually a winner when we have visitors and need to make something quick and easy. This is my mum's simple recipe:

  • 4 heaped tbsps of coconut (desiccated or shredded - whatever you have)
  • 4 heaped tbsps of flour (my mum used plain flour but you can use anything here - I use ground almonds)
  • 2 heaped tbsps of sugar (I use rapadura)
  • Rub in enough butter to make it crumbly


If you need more topping just use any measure and keep the quantities ratio the same.


I thought I'd have a fiddle around with this recipe and see what I can do to make it dairy free. As I mentioned above, I use ground almonds instead of flour but you can use whatever flour suits you and your families diet. I've also weighed it for those of you that like to follow a recipe.


You'll also need some stewed apples - I just do mine plain with no added sugar or spices and I don't cook them too much - just until they're soft. I often stir through some frozen or fresh raspberries too.

Gluten Free Apple Crumble Recipe

Gluten free, wheat free, dairy free, egg free, peanut free, soy free (can be tree nut free)

Ingredients:

1kg apples stewed (and fresh or frozen raspberries if desired)
100g ground almonds (I use blanched activated that I have prepared myself) - or any flour you like
60gcoconut (preservative free - desiccated or shredded)
50grapadura (or sugar)
80g solidcoconut oil (pop in the fridge for a bit if it's not solid)

Method:

  • Either process in a food processor or Thermomix until it's kind of clumpy and crumbly. Add a little more coconut oil it you feel it needs a bit more
  • Sprinkle on fruit and bake in oven at 180°C for approx 20 - 25 minutes until hot and golden on top
  • Serve with dairy free custard
