Happy Tummies YUMMY Anzac Biscuits


This week I've created for you a yummy Anzac biscuit recipe - just in time for Anzac Day. You won't even be able to tell they're wheat free, dairy free, egg free, nut free and soy free.


Make them gluten free by swapping the oats for quinoa flakes. Use rolled oats if you like but I used quick oat because my son isn't keen on 'bits' in his food (yep, fussy I know!) I've made a little video of me making them for a bit of fun.


Gluten Free Anzac Biscuits - Happy Tummies


Anzac Biscuit Recipe

Ingredients

1 cup (130g) gluten free plain flour (I used Bob's Red Mill All Purpose Flour and added ¼ tsp xanthan gum as recommended on packet)
¾ cup (65g) preservative free desiccated coconut
⅔ cup (100g) rapadura sugar
1 cup (100g) wheat free rolled oats (I used organic quick oats) - use quinoa flakes to make gluten free
125gcoconut oil
2 tbsp honey
1 tsp bi-carb soda
2 tbsp boiling water

Method

  • Pre-heat oven to 150°C
  • Blend together flour, coconut, oats and sugar
  • Melt together coconut oil and honey over low to medium heat in a saucepan
  • Mix bi-carb soda with boiling water (mix these together just before adding to saucepan - it should fizz up)
  • Add the warm coconut oil mixture to the dry ingredients and mix together
  • Roll into balls, place on oven tray leaving lots of room for spreading and flatten slightly with your hand
  • Place into pre-warmed oven for approx. 12 minutes
  • Leave to cool on the tray
